cup pearl barley

cups vegetable broth

15 oz crushed tomatoes

cup milk or plant milk

teaspoon dried basil
Salt and black pepper
to taste
Instructions
Heat olive oil in a large pot over medium heat. Add the onion and sauté for 5 minutes until softened.
Stir in garlic and cook for 1 minute.
Add the pearl barley and vegetable broth. Bring to a boil, then reduce heat and simmer for 25 to 30 minutes until the barley is tender.
Stir in crushed tomatoes, milk, dried basil, salt, and pepper. Simmer for another 5 to 10 minutes.
Taste and adjust seasoning before serving.
