Ingredients  

  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 garlic cloves minced
  • ½ cup pearl barley
  • 4 cups vegetable broth
  • 1 can 15 oz crushed tomatoes
  • ½ cup milk or plant milk
  • 1 teaspoon dried basil
  • Salt and black pepper to taste

Instructions 

  • Heat olive oil in a large pot over medium heat. Add the onion and sauté for 5 minutes until softened.
  • Stir in garlic and cook for 1 minute.
  • Add the pearl barley and vegetable broth. Bring to a boil, then reduce heat and simmer for 25 to 30 minutes until the barley is tender.
  • Stir in crushed tomatoes, milk, dried basil, salt, and pepper. Simmer for another 5 to 10 minutes.
  • Taste and adjust seasoning before serving.
