Hearty Rustic Chicken & Lentil Stew

Everything cooks in the slow cooker, so cleanup is easy and the process is completely hands-off. Just load it up in the morning and enjoy a ready-made dinner by evening.

Ingredients  

  • 2 lbs chicken drumsticks
  • 1 cup green or brown lentils rinsed
  • 3 carrots diced
  • 2 celery stalks diced
  • 1 large onion diced
  • 4 cups chicken broth
  • 3 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt & pepper to taste
  • Crusty bread for serving

Instructions 

  • Place chicken drumsticks in the bottom of your slow cooker.
  • Add lentils, carrots, celery, onion, garlic, chicken broth, thyme, bay leaf, salt, and pepper.
  • Cover and cook on low for 7–8 hours or high for 4–5 hours, until chicken is cooked through and lentils are tender.
  • Remove bay leaf. Shred chicken off the bone and stir it back into the stew.
  • Serve hot with crusty bread.
