Ingredients  

  • 4 cups chopped cabbage
  • 2 cloves garlic minced
  • 1 medium onion sliced
  • 3 large eggs
  • 4 cups cooked noodles any variety
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Chopped green onions for garnish optional

Instructions 

  • Heat the oil in a large skillet or wok over medium heat. Add the sliced onion and minced garlic, and sauté until fragrant and translucent.
  • Add the chopped cabbage to the skillet and stir-fry for about 5-7 minutes, or until the cabbage is tender but still crisp.
  • Push the cabbage mixture to one side of the skillet. Crack the eggs into the empty side and scramble until fully cooked.
  • Mix the scrambled eggs with the cabbage and add the cooked noodles. Pour in the soy sauce and toss everything together until well combined. Season with salt and pepper to taste.
  • Serve hot, garnished with chopped green onions if desired.
